Wedding Cake Stand

Crystal wedding cake stands can steal the show!  I create custom, hand crafted multi-tier crystal cakes stand for brides-to-be internationally.  The 5 tier crystal cake stand I created stands nearly 5 feet and weighs over 23 pounds!  The sizes of the tiers are 18″, 16″, 14″, 12″ and 10″ with 7″ chandelier style acrylic crystal strands.  I am currently selling this piece and other custom crystal cake stands on Etsy at Cakedress.com if you are interested.  I can created similar stands in virtually any size so please message or convo me if you are interested in pricing.

In my opinion, a plain white wedding cake would look elegant and timeless on this crystal cake stand.  I think you would want a square sheet cake that was about 3″ deep for each tier and maybe a simple monogram cake topper as an accent.

The crystal and silver monogram cake topper is a brilliant idea for the 5 tier crystal cake stand, it would tie the whole cake together.

Delightfully Painted Cakes–Monet Style

Monet Style “Painted” Cake with Buttercream

My mother is a HUGE Claude Monet fan so this year, for her 50th birthday I made her a “painted” cake loosely representing one of Monet’s beautiful paintings.  I baked a classic yellow cake and whipped up a large batch of delicious buttercream frosting.  I separated the buttercream frosting into smaller cups and individually tinted the buttercream colors using Wiltons gel colors.  I then frosted the cake with a white layer and “painted” the cake to resemble Monet’s painting using a food safe paintbrush.  The process was very fun and completely artistic 🙂

The above cake is a great representation of a superhero cake at it’s best!  This cake theme appears to be Spiderman with accents of Thor, hulk and Ironman…classic.  This cake is very even, linear and clean.

If you don’t want to go “traditional” superhero with Spiderman, Hulk, Ironman or Wolverine you can go superhero inspired like the picture above.  This is a really cute way to not use the commercial superheros and create your own in your children’s image.  This is a very creative and custom idea–very cute!

Wizard of Oz–Somewhere Over the Rainbow

It has been a few days since my last blog entry–things have been crazy busy here and I haven’t had much time for my cake creations 😦  My very dear friend Susie turned 51 on Saturday and her favorite movie of all time is the Wizard of Oz.  Naturally I made her favorite cupcake, Strawberry Margarita cupcakes with Strawberry Margarita Buttercream frosting.  I used Airheads Extreme Sours as the “rainbows” and dollops of the buttercream to represent the clouds.  These cupcakes were very simple yet cute and delish!   Message me if you are interested in this recipe 🙂

I love the above Wizard of Oz cake because it is edible and in my mind it totally represents what I think of when I hear Wizard of Oz–it has the main characters, Dorothy, the Cowardly Lion, Scarecrow and the Tinman.  The cake also has the yellow brick road, Emerald City and of course the ruby-red slippers!

Nintendo Smash Brothers Boys Birthday Bash

For my sons 6th birthday party this year he requested a Nintendo Smash Brothers themed birthday cake–this is my creation!  I made a 2 tier triple chocolate cake, covered in shiny, satin-like chocolate frosting.  This cake is decorated with a bit of white buttercream and handcrafted fondant creations–Mario, Luigi, Yoshi, Samus, Kirby and Zelda.  I also created Nintendo-like stars as extra filler and pop for the cake.  My son Christian and his friends LOVED this cake, not only was it delicious it was absolutely a perfect pairing for a Nintendo themed party!
I really could not find very much party themed decorations or confections to go with the Nintendo Smash Brothers theme but there certainly are tons of Mario and friends decorations!

These handcrafted custom Nintendo Smash Bros cupcakes are just adorable.  The designs are clean, bright and a great representation of the actual characters–they are unmistakably a part of the Nintendo Smash Bros collection.

Since we had difficulty finding actual birthday decorations for the Nintendo Smash Bros theme we just printed out images of the Smash Bros characters, printed them out, colored and cut them–they were amazing!  They looked so authentic yet handmade and creative at the same time!  My son just loved his Smash Brothers themed party.  If you child is into Smash Brothers I suggest you look online for pictures, use your color printer to print the images, purchase matching decor like streamers and balloons and you will have a very custom, unique party for your little guy.

Life is so “beachy”

Hello all!  Today, as fall is approaching I think today is a great day to wrap up summer with beach inspired cakes and parties.  I created the above 3 tier cake for a church function–DNow.  This cake is supposed to be somewhat representative of the poem “Footprints in the Sand”.  The entire cake was a deliciously moist yellow cake.  The bottom tier was filled with strawberry preserves, the middle was filled with seedless blackberry preserves and the top tier with passion fruit filling.  Using fruit fillings for tiered cakes can really elevate the cake and make it into something so much more special than a plain old yellow cake.  I frosted the entire cake with buttercream, used white buttercream to represent “pearls” and bubbles, crushed graham crackers as the “sand” and used candy melts and a shell candy mold to make the seashells.  This cake was a complete hit, not only was it super cute, it was also fantastic to eat!

Roses Are Red….Fondant Roses Can Make A Cake

Fondant flowers, especially fondant roses can really add a whole level of creativity and uniqueness to a celebration cake.  I created these burgundy and orange fondant roses for a October/Fall wedding.  The client will have a 10″ and 6″ square cake and will use three fondant rose “bouquets” to dress it up.  If you have an interest in cake decorating but have no fondant experience I highly recommend you give fondant a shot.  Fondant is super versatile, can make virtually any shape, can be made to match any color, is inexpensive, easy to make at home and just plain fun!  Fondant is like Pla-Doh for adults 🙂

How to Make Marshmallow Fondant

Marshmallow fondant is easy to make and pretty fun to use. You can cover cakes and cookies with it to give them a smooth professional-looking finish or you can cut out shapes and designs to decorate your icing with. Its cheaper to make your own fondant than it is to buy it pre-made plus the pre-made stuff tastes a bit like cardboard unless you are willing to pay for a very high end product.

All you need is:

  1. Marshmallows – they can be big marshmallows or mini ones, either one works fine.
  2. Icing sugar – You’ll be mixing the icing sugar into the marshmallows to make a dough so I usually make sure that I have an entire bag on hand.. but I rarely use the whole bag.
  3. Food colouring
  4. Flavoring oil – This is optional. If you don’t add this your fondant will be sweet and flavorless which works well if your got all the flavors your want in your cake already

P1150680This time I decided to make it with those mini fruit flavored marshmallows. I had to sort them by colour first. I figured they would add a little bit of flavor to the fondant so I wouldn’t have to add much flavoring oil.

I use gel colours to dye my fondant but regular food colouring will work too. You won’t be able to get really dark colours without making your fondant sticky, but for lighter colours you can just even it out with more icing sugar.

I also had lemon oil and coconut flavoring on hand.. oh la la the value brand  (which still works fine).

Take a couple of handfuls of marshmallows and put them in a microwave safe bowl. Add a couple of drops of water and toss the marshmallows in it until they are all a bit damp. If you are going to just make one colour then put the whole bag of marshmallows in the bowl and add a couple of teaspoons of water. If you’re going to put flavoring oil in, add it now and add less water

I like to make smaller batches because its easier to add the colour to the melted marshmallow than it is to work the colour into the fondant later.

Step Two:

Stick the marshmallows in the microwave for ten seconds at a time until the are puffed up and easily stir into a goo with a wooden spoon. Tip: Grease your spoon with butter, things can get a bit sticky.

Step Three:

Add food colouring  to the melted marshmallows until you get the colour you want. Remember that you’re going to be adding icing sugar which will lighten the colour so make it a bit brighter than you need.

Step Four:

Start folding icing sugar into the marshmallow goo until it becomes a soft and fluffy dough. Grease your hands with a bit of butter and turn the marshmallow out onto a table sprinkled with icing sugar. Continue to knead in icing sugar until the fondant is stiff enough to roll out.

If you add too little icing sugar the fondant will be very sticky- Just add more icing sugar

If you add too much icing sugar the fondant will be very stiff and hard to roll out – knead in a little bit of butter

For this batch of colours I made larger batches of lighter colours and then worked some extra gel colouring into the already made fondant to make smaller batches of darker colours. The dark purple and dark green were made from the a light pink and light green.

All you need to do is knead the gel colour in.. it takes a while to get it all mixed in which is why I only do it for smaller batches.

To store your fondant wrap them in pieces of lightly greased plastic wrap and keep them either in a big ziplock bag or a tupperware container. The fondant is essentially a sugar paste (its just marshmallows and icing sugar) so it has a shelf life of three or four months. If it feels a bit stiff and hard to use after being stored for a long time you can soften it up by kneading a bit of butter in or putting in the microwave one-two seconds at a time.

The fondant supplies cost me about $3.00– a HUGE savings when compared to the Wilton premade kind…and is so much softer and easier to work with.
